Okay.
So if it is related to HikaShop ; it's not a bug and it is something implemented in HikaShop.
Even if you have a custom field just for a product or a category, products can evolve in your store.
You can also have old orders where the product is no more available or where the product can have different category that it have before.
That's why HikaShop allow you to access to all item custom fields when you edit an order.
