If I am selling 10 different items is there a way to provide an automatic discount (not coupon/discount) if the user places any combination of items in their cart...

Example...
Items 1 - 10 (all different items) are $10 (The items can only be purchased in a quantity of 1)

If they place any combination of 3 items in their cart (i.e. items 2, 3, 5) is there a way to automatically discount all of the items in the cat from $10 to $7?

Thanks in advance

You should create an automatically loaded coupon. That way, the coupon will be loaded automatically in the cart based on the products in the cart. In that coupon, just set a discount of 30% and a minimum number of items of 3 and you're all set.
You will only be able to do that in commercial editions of HikaShop.

Upgraded to Essential and works perfect...

The coupon shows that it was applied in the cart content area, but is there a way to show the auto coupon applied in the cart module?

Also is there a way to apply multiple coupons?
Ie. the auto coupon AND a $5 off coupon?

No, the coupons are only shown in the checkout.
If you want to show the coupon int he cart module, you would have to edit the file "cart" of the view "product" via the menu Display->Views and add some custom code to display that.

There can only be one coupon per order.
