I see no means to globally change products.

Example: If I wish to make 20 products in my shop all have the same tax category. Or maybe I create a new product category and wish to add dozens of products to it.

It seems like opening each product individually is not the way to do this.

Indeed, there is no tool for that.
It's on the todo list but we didn't had to time yet to work on that as it's a complex thing to do if you want it to be flexible enough.
You can do wide changed with the import of products and simple CSVs that you can quickly edit via excel.
For example, to change the tax category (to the tax category with the id 2) of products you could do use a CSV like that:
product_code,product_tax_id
my_prod1,2
my_prod2,2
my_prod3,2
...etc...
