Updated to 2.3. how to fix Order Email to customer

Hello,
I just had my cart updated to the most recent version and when I did a test order to see if everything was working, there was a problem with the order email a customer receives.
I do not have customers login to the backend, I have the cart set up so the customer checks out as a guest. When I did a test order and received the order email details, there were a few things in this email that I want removed.

First issue in question: the letter starts out with Hi , then right below that it says: THANK_YOU_FOR_YOUR_ORDER_BEGIN .
I want this part removed from the letter it doesn't look professional: THANK_YOU_FOR_YOUR_ORDER_BEGIN

Second issue in question: at the bottom of the letter it says PAY NOW and it's a link the customer can click on to bring them to the backend of my site. I do not have my customers create accounts, so I do not need them to log in. They just checkout as a guest. Plus if they have already paid, this could be confusing to them.
I want this part removed from the letter I don't need it. How do I remove that section where it says Pay Now in their Order letter they receive after paying for the order.

1. 3. The problem is probably coming from the fact that you don't have the last translation file version so the solution will probably be to edit your translation file through "Hikashop->System->Configuration->Languages", and use the "Load the latest version from our server" button.
Also note that if you really don't want these texts, the solution will be to edit the value of these translation words.

2. The solution will be to set the "Payment of orders not paid immediately" to NO through "Hikashop->System->Configuration->Main"

I was able to remove the "Pay Now" link. However, I'm unable to find where the "THANK_YOU_FOR_YOUR_ORDER_BEGIN" and the "HIKASHOP_MAIL_HEADER" is located in my older version of the language files. Are these two files located in the new updated version of the language file and this is why I can't find them? I really only need to get rid of the "HIKASHOP_MAIL_HEADER" , as it's a link to the backend of the site.

I do have an older version of the language file because my programmer could not figure out where to modify the progress bar at checkout, the "next" button, and the word Registration in the checkout area, so he modified it in the language file and just copies it before he does an update to the site so that he does not lose the changes. All modifications get erased on each update the way he did the modifications. If there is a proper way to modify this information without losing the changes on each update, can you please give me step by step instructions, and I will figure it out myself and change it the correct way. My programmer can't find correct way, so if you tell me how I will do it. I've been trying to learn this cart, and you guys have been so awesome to help me through this.

Also, If I upload the newer version of the language file, will I have to re-do all my modifications in the checkout are of the cart? If the cart during checkout allowed a customer to just checkout as a guest and there was no registration information for them to login, that would be great. I only have my customers checkout with no registration, basically I have the cart set up as a guest checkout. If the new version has this option where I don't need to modify certain words, please let me know.
