The payment log file is a setting available under the Files section in the main tab of the HikaShop configuration page:

Regarding the registration:
The email address exists yes.
First, check the menu Customers>Emails history. There, you'll see the emails sent by HikaShop. If you see there my "user account" email, with the activation link, which you should, it means that HikaShop sent the email to your email server and it accepted it.
If the email didn't reach my mailbox, it means that the email was flagged as spam for some reason or there was a technical problem on your email server.
For that issue, there are also several things you can do:
- first do a test yourself with one of your email addresses. Do you receive the email ? If yes, then maybe your hosting email server was flagged as spam by my email server and not by your receiving email server. If no, it's probably that the email was flagged as spam on your hosting email server.
- I would recommend to use
www.mail-tester.com/
to make sure that the emails are correct and that everything is setup properly. It's often the case that DKIM and/or SPF is not configured properly on the domain name, which leads to the email servers flagging the emails as spam and discarding them.
- contact your hosting support where your email server is and ask them what happened to the emails. You can do a screenshot of the email details in the email history to give it to them so that they can check the log of the email server for information on the issue.
Finally, regarding the shipping address, I entered it during the registration on your checkout. Why the question ?
