Setting up for different "Collections" each containing similar "categories"

-- HikaShop version -- : 3.5.1
-- Joomla version -- : 3.8
-- PHP version -- : 5.6

I am considering Hikashop for a client who is is a whole-seller in jewellery . Typically he has different collections (from different vendors or countries), Each collection will have several categories (necklaces, bracelets etc).

My questions are:

How to set up Hikashop for this?
Will the starter edition allow to demo this (I am pretty sure that eventually we will go with the Starter or Business edition)?
Will we be able to build different level of access (for public, with a set of prices, shops and customers with a different set of prices)?

Hello,

All edition of HikaShop have multi-categories for products.
And all edition of HikaShop have characteristics/variants.

Regarding the support of Joomla access levels ; it requires HikaShop Business. These ACL can be set-up on products themselves and on prices.
