Hi.

Could you please tell me how to set the tax up to collect ONLY from customers who's billing address is in the same state as my store?

Yes, I had already read that thread and it doesn't seem to solve the problem... or at least in reading all the directions, questions and answers the problem did not seem solved.

I only want to tax orders where the purchaser lives in my state (Florida). All other sales are not taxed. The prices should not show the tax as the tax should only be added at checkout and then only when the purchaser lives in Florida. Right now, it adds the tax onto every item.

There must be a clearer set of instructions for this...

If you followed the steps there, then your tax rule is already configured properly.
If it adds the taxes onto every item it means that either:
- You're not logged in, and the main tax zone your configured in the configuration is your state (Florida) so it applies the taxes.
- You're logged in and the address of your user is in your state (Florida).
It also means that in all your products listing modules/modules and in the configuration of HikaShop, you set the "show taxed prices" option to something else than "no tax".

You're right... I saw that when I followed the steps that it did create a new tax category. Should work. I'll let you know when we sandbox this thing.
