Regarding the shipping address display, there is a patch that you can apply before the coming release.

For the payment and shipping details, I was not able to reproduce your issue so we would need more details regarding the order details and the user ACL (in the HikaMarket context).
If the user do not have access (ACL) on some elements, these won't be displayed in the email.
It could explain your current issue.
