You can potentially remove the email address when checking out as a guest, but be careful because this way the customer will never be notified about his order.
He will not be able to know the order status, if the payment is well proceed, if the package has been shipped, etc.

I think that the easiest way will be to set a default address email filled by some javascript code in the page.
And hide the email field with some Javascript too if the chosen method is "Guest".

So require knowledges about javascript development.
