serious issues when i try to update items in my st

when i try to update just about any thing in my store i am getting the following error

500 Internal Server Error

The request was not completed. The server met an unexpected condition.

it is getting really frustrating... not sure what is going on the shop was working like a champ and we were just about to go in to production when we started getting these errors... plase help

Could you activate the Joomla's debug mode? (Site>Global Configuration)
It should give us more informations about the issue.
