default value in scrool options

the registration form Region / Country is set in Rhone / France, (scrolldown options)it is possible to set a different default value or remove unnecessary options ?

Sure, you'll just have to :
- Go to "Hikashop->Display->Custom fields"
- Edit the address_country field
- Use the Default value option
