custom field for each product?

Hi. I created several custom fields as product field. If i assign those fields to the category i don't see the field on "custom fields" section on product details. On,y if i assign the product to the custom fields settings i can do that. So my question is: do i have to assign every product belonging to that category to the custom field? Or something doesn't work here correctly?
