Okay so.
You have 4 options in the HikaMarket configuration to set-up the categories.

In your case, I don't know if you want to create a vendor category for each vendors but what I know is that you want to change their "root category".
Using the "vendor home" as "root category" is not useful in your case because you want to allow more categories.
So the best is to use the value "yes" and to choose the category which will be the root for your vendors.
You can select "product categories" if you want to allow all categories in your store, or you can use another category to put more restrictions.
Please note that even if you choose "product category" in the HikaMarket configuration, you will be able to override this setting for each vendor.
So you can have a vendor with a "root category" set on "Rotweine" for example. Thanks to that, the vendor will be able to select the category "Rotweine" and all sub categories of this one.
