Possible to Point a menu item at 1 Category?

just want to have a link from one of my menu's to list products from only 1 category.

Is this possible?

Of course. You need to go in the joomla menu manager and create menu of the type hikashop product listing. Then, in the hikashop options of the menu (there is a link to them on the right of the menu edition screen), you can set the "parent category" option to your category.
