Email text editing

Hello, we'e setting up a Hikashop Essential - we can't see where to go to edit the texts which are sent to customers at various stages in the process. It says you can do it in all versions of Hikashop,in the 'Features' list, but I can only find information on how to edit emails regarding the Business version.
Where do we go?
