Show when new stock is due?

Is there some way to show the buyer when new stock is due for
a product that currently has no stock available?

You could create a custom field of the table "product" (commercial editions only) and of the type "date" via the menu Display->Custom fields.
That would allow you to enter a due date for your products which would be displayed on the product page (the specifications text on the product page can be changed/removed by overriding the translation www.hikashop.com/en/download/languages.html#modify ).
