It's hard to say anything without looking at the HTML code of the page, the HTTP headers sent by your server, etc...
Encoding issues depends on your webserver, your browser and sometimes the way joomla is configured/some files are saved.
That's why being able to look at the website directly is necessary.

Dear nicolas,

thank you for your help, I have found the problem guiding notepad++. The Problem was that the de-DE.com_hikashop.ini was not saved as utf8 file.

It was saved as "UTF8 without BOM".

After converting the file with notepad++ to utf8 and saving, everything is best. The same is with the other hikashop ini´s de-DE.com_hikashop.sys.ini and de-DE.com_hikashop.ini in the administrator path.

Best regards

Thank you for your feedback.
"UTF8 without BOM" is the recommended encoding format for joomla translation files so even if that fixes the problem for you, that's not really the problem you're having. There must be something else on your website which doesn't define properly the encoding, like your template maybe. Anyway, it's working for you so that's great.
