Add extra field

Would it be possible to put a comment box or extra text field as indicated to allow customers to state if they hav a colour preferance before they make payment?

Yes, in HikaShop Business with a custom "order" field, and with the section "Fields" added to the checkout workflow.

To do that the solution will be to directly create an "Order" custom field via "Hikashop->Display->Custom fields" and add the "Field" step to your Checkout workflow via "Hikashop->System->Configuration->Checkout".
