Replace Finish button with Payment method button.

It would require a lot of customization in the views and it will highly affect how the checkout is working.
More than that, it would not feet how the checkout is handle in HikaShop 3.

The payment buttons are not really buttons but html "radio" which allow the customer to select the method.
For payment methods which require the credit card details directly in the checkout, the process is made in more step because the selection of the method will show the form and the customer has to validate it.

So, yes, you can customize HikaShop as you want ; the override system give you that possibility.
But I'm afraid that we won't be able to guide you or give you more details about how to change the checkout in that way knowing that HikaShop 3 is already proposing a new way.
