Setting default Country in Checkout address stage

-- HikaShop version -- : 3.3.0 Business
-- Joomla version -- : 3.8.6
-- PHP version -- : 7.1.14
-- Browser(s) name and version -- : Edge 41.16299.15.0

I have read everywhere but cannot find how to change the default country. All my settings I can find are set to United Kingdom. The Zone on my server is set to London. When a customer gets presented with adding an address the default country is set to France. How can I change this to default to United Kingdom. Many thanks for your time.

Of all the places I did not check was Custom Fields - thank you very much, now all sorted.
