Custom Amount in Checkout

There is no system that could do that as far as I know.
That would require the development of a plugin so that it could take the value of a custom field of the table "order" and add it to the cart as an extra fee.

With the donation plugin included in HikaShop Business, the only solution is indeed with a custom field shown on every product (if yuo want to propose that for all the orders).
The goal of that plugin is not really to do what you want. It's to be able to have one product (or a few of them) where the customer can enter the price he wants to pay for the product.
It can be useful for donation products, or for a page where you want the customer to enter an invoice number and the amount of the invoice (which was previously generated outside of the website) so that he can pay the invoice online via your shop.
It's not really meant to be a "tip" function.
