Proper table for custom field (user group)

I have created 7 customer groups, each with their unique pricing for each product.
I also created a Custom Field in the registration form so that customers can choose their user "level" (Group) which is based on their establishment's occupancy. The more occupancy, the more expensive the same product is.

To explain further, This process of assigning user groups is not automatic , meaning that the custom field does not really assign the user to their group. Rather the admin manually does it once he reviews the registration data and check that the customer has been truthful. Choosing a lower level could mean hundreds, even thousands of Dollars in savings, so we use Google street view and other tools to audit a customer choice in that regard.

However, While assigning the customer to the proper group is very easy in the Joomla user manager, I have failed to find a place in the backend where the results from the custom field is visible to the admin.

I realize that I probably made a mistake in assigning the custom field to the "Address" table. But which table should I choose given the parameters above? And where would I find in the administration a complete list of registration fields, custom and otherwise?

Also, would there be a way to automatically assign a user to the user group they choose and have the admin simply authorize it rather than seeking the result of the registration and then picking the right group?
