Payment methods only display paypal after testing

I just installed HikaShop Starter 4.4.0 [2011271835] on Joomla! 3.9.23
Everything went smoothly until I tested paypal as a payment method. I saw a long list of other options before I selected paypal. I added my address to the box and tested a checkout experience. It went smoothly. Then I decided to unpublish paypal and test another payment method but now only paypal is displayed. I went to the right side filter dropdown list to select another option but received an error message:"1267 Illegal mix of collations." I used admin tools to change the Database Collation to UTF-8 Multibyte which got rid of the error message but paypal is still the only payment option. I want to use another and it won't display any options. If I select another option from the filter I am told, "No method found, use the new button to create your first method configuration."

What am I supposed to do to get the payment method options back to the way they were? And what went wrong?
