Where does tab text come from?

That's the name of your main category, and the category you selected in the "main category" setting under the "products options" or "categories options" tab of your menu item. At the same place, you'll find a setting named "Use the menu name as title". So one solution is to activate this setting so that it uses the menu item name instead of the category name. Another option is to edit your "product category" category via the Products>Categories menu of your HikaShop in order to change its name.
