I don't understand what you mean ?
You want the customer to be able to select a date and time with their purchase, and then be able to look for all the orders for that date ?
If that's the case, you can use a custom order field of the type "advanced date picker" to add that.

If you're saying you want something where once someone booked a location for a specific date/time then the location is not available for other at that date/time but still available for other dates/times, in that case, that would require having some stock management by date/time which isn't supported and would require some development to be able to do.
