Once the payment is done, Authorize.net in SIM mode will send a payment notification to HikaShop which will change the status of the order to "confirmed" and send you and the customer a notification email that the order has been confirmed.
At that point, you can send the package with the goods to the customer and then change the order status to "shipped" and activate the notification so that the customer get again an email.
If your orders are not confirmed automatically with Authorize.net in SIM, it means that something is not OK on your website and Authorize.net wasn't able to deliver the payment notification to HikaShop (for example if your website access is restricted to some user groups, or to some IPs).
