Updating HikaShop won't cause that problem. That's not possible. Install the 2.3.5 install package on your website and you'll see that you'll still have the problem.
The question marks are displayed when the collation of the table has been changed in the database. We're not blaming you but just stating a fact. It can happen when websites are backed up/restored, databases are copied from one server to another, etc.
The simplest solution is to empty the hikashop_zone and hikashop_zone_link tables via your phpmyadmin and install HikaShop again (whichever version). That should put back all the default zones with the proper names. If that doesn't help, do the same but instead of emptying the 2 tables, delete them completely before the install.
That however means that you'll loose any zones that you had created so far and you'll have to recreate them and reselect them in your configuration, the shipping/payment plugin (if used), etc.
