Creating Guest orders in the backend

Hello,
I have a client that from time to time needs to generate orders via the admin backend.

However when they create a blank order and begin to fill in the details, the Customer block only allows you to select an already registered Customer / Joomla user account.

All these orders will be processed as a 'Guest' some will not even have email addresses (it is for older clientele!).

How can I add a Customer name to this box, that will not be a Joomla User account?
