With HikaShop Business, you can edit the emails in the menu System>Emails. There, you can just provide your email address in the BCC field of the emails for which you want to receive a copy.
Otherwise, without HikaShop Business, if you have the PDF invoice plugin, there is a setting in the plugin to provide an email address so that it can receive a copy of the confirmation emails sent to the customers, along with the PDF invoice.
Otherwise, if it's just the "payment notification" email, you can enter several email addresses in the "payment notification email address" setting of the HikaShop configuration, separated by a comma without any spaces so that all of them can receive a copy of this email, which is sent when a payment plugin receives a notification of a payment.
