Characteristics/Variations

I am trying to set this up and I've read the FAQ and I don't know if I am making this harder than it needs to be but I'm having a hard time with this. So, I have linens and I have the colors. I want to show the linen colors on the website and the customer click the image to choose the size. I want the customer to have to click the drop down to see the different sizes. Right now, under the product image, is has the price of the first variant.

This is how I set this up:
I have 1 characteristic called "Size" and the values I have entered the size of the linen.
I have the image of the color "Almond Linen Color" entered.
I added the Characteristics "Size" and saved it. The variants tab appears.
I click the "Add variants" button and manually choose each and every size I want for this item.
I click the edit button to set up the price.
Save

My issues, on the website, the image currently shows a price which is just for one item. Is there a way I can put "Choose Options" like the button has?

--How do I set up the variants to always have the same price for the items? I don't want to be entering prices for each item each time, same if there was a change to a price.
--When I entered the "Price", the "Price with Tax" is the same as "Price" and is not calculating correctly with tax. It is showing the exact same number as "Price"
