The issue is that the dimensions of the products are rearranged automatically to be able to properly stack the products together in a package. So a restriction field on one dimension might actually affect another dimension than what you expect due to the rearranging that is done during the package creation process.

Now, you could actually do what you want with the volume restrict: Set your products width and length to 1 and the height to what you want and thus the volume calculated will actually be the sum of the heights of the products. So you can then use the min/max volume settings in your manual shipping methods.

No. However, you can activate the "shipping price per product" setting of your shipping methods and then, in each product, you'll have a "shipping prices" area where you'll be able to use the "block" checkbox of the shipping methods to disable shipping methods when that product is in the cart.
