How do you edit the order status exactly ?
From the order listing, from the order details ?
Do you have elements shown in your PHP error log ?
If the process is stopped due to an error, some plugins might not be called via the "onAfterOrderUpdate" trigger.
Maybe an error in an email or another plugin.. It's difficult to say like that.
