The same product has different sizes with different prices, Is it possible to show a price range on the product listing instead of a set price? See attached example from a Amazon product listing.

In the hikashop options of your products listing menus and modules that you can access via Display>Content menus/modules, you can change the option "Price display method" to "range".

Thank you! I found it! :P

However, it shows the different way that I don't expect, see attached.

Can't it show as :$300- $500 on the listing?

You can.
You just need some translation override tweaking:
www.hikashop.com/en/download/languages.html#modify
You can use these override:
PRICE_SEPARATOR=" - "
PER_UNIT=""
