I was wondering how do you edit the store offline message? cant seem to find it anywhere?

That text is available in the translation file of HikaShop. Change it there and it will change to what you put.

No, it says "The shop is in maintenance"
It's just your template CSS which displays the text with the same color as the background, so you don't see it.
You will have to change the CSS of your template.

That is usually hidden with the CSS of your template. You can do like that:
dt.message{display:none;}

You can't change that. It's a standard text which is displayed for all the messages. Not only the one for the store offline.
