As admin add new customers and orders.

I would like in the backend as admin to add new customers and the corresponding order.
Is this possible? Or can this only through the front-end and the accompanying procedure?

You can create a new user via the joomla user manager.
Then, you can create new orders via the Orders menu of HikaShop and assign a user to an order.
So yes, that's possible.
