Plus / Minus behave strange, also want to remove t

If you don't want any quantity field and plus/minus buttons, you can change the option "Display the quantity field on the product page" to "no input".
The text in the button, like any text in HikaShop, can be changed with a translation override:

Regarding the fact that you added CSS to remove the +/- and that they appear when changing the characteristic, it's because your CSS modification is not correct. I would need to look at the page with firebug in order to tell you precisely what to do but as I explained above, there is an option to do that, so you don't need any CSS in fact.

You will have to edit the code of the file administrator/components/com_hikashop/helper/cart.php in the display function
I would recommend though to do a quantity field display override as explained here:

But it's more complex that just editing directly the code of the file. However, that will allow you to update without loosing your changes.

The file administrator/components/com_hikashop/helper/cart.php is a core file, not a view file. You need to edit it via FTP.
