I would like to be able to create a variation where a customer can multi-select options--is this currently possible? Perhaps a feature request for future releases?

That's not possible with variants or options.
You can do it with custom fields of the table "item":

However, custom fields cannot handle price variation or per-choice stock handling like options or characteristics.
