All the overlapping text etc, any idea how to fix?

That comes from your template, not hikashop.
for example, for the carousel, you need to remove the line
height: 25px;

from the code:
.jcarousel-skin-vjt-horz .hikashop_product_name, .jcarousel-skin-vjt-horz .hikashop_product_price_full {
display: block;
width: 100%;
line-height: 25px;
height: 25px;
text-align: center;
}

in the template CSS.

I would recommend that you contact your template provider.

I've tried that, doesn't seem to have done anything. I sent you a message regarding who the supplier of the template was (they're also linked on the site)

I can assure you that this modification works. I've done it successfully on your website with firebug.

So you probably didn't do the modification properly. You will have to see with your template provider how to modify the style of the template properly as I don't know how your template is done.
