change state code for tax to say "Sales Tax"

please see attached screenshot.

1. How do i change the NYS to say Sales Tax
2. how do i remove "You chose the payment method:"

Hi,

1. You have to deactivate the option to display the detail taxes.

2. You have to remove the step "status" from your checkout workflow.
