Thanks for the answer, the problem is that it is not about physical products with shipping, as it comes to touristic tours that vary in price based on selected characteristics(number of people / payment method).

It will require to create a little PHP plugin based on the function "onPaymentDisplay(&$order,&$methods,&$usable_methods)".
Here check the content of the order, and based on the products you can edit the $methods variable in order to restrict to the desired methods.
